You ate something excellent out and want to reconstruct it in a normal kitchen.
I ate something in a restaurant and want to recreate it. Reconstruct it from my description. 1. **What it probably was.** Name the dish or the tradition it comes from, and say how confident you are. 2. **The components**, listed separately, since a plated dish is usually four or five things made apart and assembled. 3. **The restaurant techniques** likely used, and for each, whether it is reproducible at home, needs a home substitute, or should simply be skipped. Be honest about equipment I will not have. 4. **The home version.** A method for a domestic kitchen, with the timings and the parts that can be done ahead. 5. **What will be different**, specifically, and which one thing to get right if I only get one right. Do not invent details I did not describe. Where you are guessing at an ingredient, say so and tell me what to taste for to confirm it.
